Peanut Butter Funfetti Protein Pancakes

What if we told you that you could eat a huge stack of peanut butter funfetti pancakes for less than 160 calories and 21 grams of protein?! They don’t look like much from the outside, but as soon as you cut into them you’re greeted with a colorful surprise, and hopefully a smile too! They are light and fluffy, filled with sprinkles and peanut butter goodness! We’re pretty sure you’re jumping up and down right now from excitement (or at least you should be!), but if you aren’t ecstatic yet, just take a look at this photo…

Peanut Butter Funfetti Pancakes

Makes 1 serving 

  • 2 tbs coconut flour
  • 2 tbs PB2 (you can use regular peanut butter but this will increase the calorie content)
  • 4 large egg whites (we recommend only using real egg whites)
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp baking powder
  • 1 tsp of nonpareil rainbow sprinkles
  • stevia to taste
  • Optional: 1 tbs PB2 and more sprinkles for topping
 
Warm griddle or non-stick pan on low heat while your prepare you pancake batter. Mix all dry ingredients together until well combined, then add the egg whites and almond milk. Spoon batter on to griddle and put sprinkles on each pancake. Cook pancakes on low heat until golden brown. Serve with more peanut butter, syrup, chocolate or eat them plain!
