Sweet N’ Spicy Turkey Meatballs

Makes 5 servings (about 5 meatballs per serving)

  • 1.5 lbs 99% lean ground turkey
  • 1 egg white
  • 2  tbs minced dried onion
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbs oat bran

For the sauce:

  • 1 can diced tomatoes
  • 1/2 cup ponzu sauce (found in the Asian section of the grocery store)
  • 3 tbs soy sauce
  • 1/4 cup ketchup (unsweetened or low sugar)
  • 1/4 cup sriracha
  • 1 tsp xanthan gum
  • 5-10 drops of liquid stevia

To make the meatballs combine all ingredients and mix well with your hands. Form meat mixture into small balls and place them in the bottom of your slow cooker. In a small bowl, combine all ingredients and mix well. Pour over meatballs and cook on low for 2.5- 3 hours. Serve over spaghetti squash, high fiber pasta, brown rice, or even a salad!
