Homemade Jelly

Walk down the peanut butter and jelly aisle of the grocery store and you’ll be inundated with so many choices you won’t even know where to start. The problem with all these store bought jellies and jams are that they’re full of sugar (or fake sugar!), preservatives and chemicals. It’s SO simple and easy to make your own there’s really no reason not to! This recipe only takes about 5 minutes to make and will last for weeks. You can also customize this recipe to use whatever kind of berries you prefer – strawberry, raspberry, blueberry, or a combination! This makes a great topping for toast, greek yogurt, cottage cheese or any of our protein bars.

 

Homemade Jelly

  • 1 (12 oz) bag of frozen mixed berries
  • 4-5 packets of stevia
  • 1/2 tsp xanthan gum
In a large saucepan, place frozen berries and heat over medium heat until berries become soft. Using a masher or wooden spoon, mash berries until they are broken down. Continue to heat until a thick sauce forms. Add your stevia and xanthan gum, and stir well. Once combined, let cool, place in an airtight jar and store in the refrigerator. Enjoy!
