Zesty Zucchini Fries

We love the summertime when there is an abundance of zucchini floating around the grocery store shelves, and there’s no better way to spice up your zucchini than by turning them into healthy french fries! This recipe is so easy, and it will even be kid approved! So what are you waiting for?! Make a big batch of these and reheat in the oven anytime for a healthy snack or side dish.

 

 

Zucchini Fries

Makes 6 servings

  • 4 large zucchini
  • 1/2 cup coconut flour
  • 1/4 cup parmesan cheese
  • 2 tsp garlic powder
  • 2 tsp minced dried onion
  • 1 tsp oregano
  • salt and pepper to taste
  • 1 large egg
  • 1 egg white

Preheat oven to 375. Spray a large cookie sheet with nonstick spray. In a small bowl, combine all dry ingredients and mix well, set aside. In another small bowl combine one large egg and one egg white, and beat until well combined. Chop zucchini into small spears, then dip into egg mixture followed by the dry flour mixture. Make sure you shake off the flour mixture so you do not overcoat the zucchini. Lay zucchini on the cookie sheet and bake at 375 for 25 minutes. When time is up, turn the oven to broil for 5 minutes. Take the zucchini out of the oven, flip, and broil on the other side for 5 minutes or until the zucchini fries are golden brown.
