Chocolate Chip Peanut Butter Protein Cookies

We love these cookies! They remind us of when when were little because we love to make cookies with our mother, and she loved having her mini sous chefs helping her in the kitchen. Now, these definitely aren’t like the cookies our mother baked which were loaded with sugar and fat (we’re sure some of you can relate!).  Our healthy cookies have no added sugar, are filled with healthy fats from the peanut butter, and have an extra boost of protein! Not to mention, they are soft and gooey – a sure crowd pleaser!

Chocolate Chip Peanut Butter Cookies

Makes 16 cookies

  • 3/4 cup peanut butter
  • 1 scoop vanilla protein powder (we used Trutein)
  • 1/3 cup oat bran
  • 2 tbs unsweetened almond milk
  • 2 egg whites
  • 1 tsp vanilla extract
  • 3 tbs semi-sweet chocolate chips
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
Preheat oven to 350 and line a baking sheet with parchment paper or foil (spray with nonstick spray if using foil). In a small bowl combine egg whites, vanilla extract and almond milk, and beat well. Set aside. In a medium bowl combine all dry ingredients and mix well. Microwave the peanut butter for 15-30 seconds (this makes it easier to mix in with the other ingredients!). Add peanut butter and wet ingredients to your dry ingredients and mix until well combined. Slowly fold in your chocolate chips and roll batter into 1 inch balls. Flatten with a criss-cross fork mark and bake at 350 for 8-10 minutes.
