Apple Pie Pancakes

There’s no better way to start your day off than with a delicious and good-for-you breakfast!  The pancakes are light, fluffy, and will melt in your mouth! They are loaded with tender apples and cinnamon, they are completely grain and gluten-free, they are packed with over 16 grams of fiber, and have nearly 20 grams of protein. Now that’s a breakfast that will leave you feeling full and satisfied! Needless to say, these pancakes will please the whole family and have them begging for seconds!

Apple Pie Pancakes

Makes 1 serving

  • 2.5 tbs coconut flour
  • 1 tbs oat bran
  • 1 tbs ground flax seed
  • 1 small apple
  • 3 egg whites
  • 2 tbs unsweetened almond milk
  • 1/8 tsp maple extract
  • 1/8 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 tsp baking soda
Heat a nonstick pan on medium/low heat. In a small bowl beat egg whites by hand, add your almond milk and extracts, and set aside. Chop your apple, place in a small microwave-safe dish and add 1/2 cup of water. Microwave the apple pieces for 1-2 minutes or until apples are soft, and drain the water. In another small bowl, add all of your dry ingredients and mix well. Slowly add your egg white mixture to the dry ingredients and mix until well combined. Then slowly fold in your apple pieces (you may want to save some for topping!). Spoon batter onto your heated pan and cook until golden brown!
