Southwestern Turkey Meatballs

One of our favorite meal prep items to have on hand during the week are these Southwestern Turkey Meatballs! They are incredibly simple to make and taste delicious paired with veggies (we love zucchini noodles or spaghetti squash), sweet potatoes, or even on top of a bed of lettuce. The only thing we don’t recommend these meatballs for is juggling. 😉

 

Southwestern Turkey Meatballs

Makes 8 servings

  • 1.5 lbs 99% lean ground turkey
  • 2/3 cup Trader Joe’s Cowboy Caviar*
  • 1 egg white
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
* Cowboy Caviar is a salsa from Trader Joe’s that has corn and black beans in it. If you don’t have it, substitute it for 1/4 cup of salsa, 1/4 cup corn and a 1/4 cup of black beans.

Preheat oven to 350 degrees and spray a baking dish or baking sheet with nonstick spray. In a bowl, combine all ingredients until mixed thoroughly (we recommend just using your hands to mix everything together). Form into 16 meatballs and bake for 20-25 minutes or until cooked all the way through.
