Skinny California Roll

 One of Liz and I’s all time favorite meals is sushi. When we lived together in L.A., we found a sushi place by our apartment that had a roll which was wrapped in cucumber instead of rice. We instantly fell in love with the idea, and we now actually prefer sushi wrapped in cucumber. It gives a nice, juicy crunch, and is low in calories so it doesn’t leave you feeling bloated or heavy like white rice often does. If you’re having a craving for sushi, this is a great alternative that only takes a few minutes to make. Feel free to add in avocado for an extra special treat 😉

Skinny California Roll

Makes 20 rolls

  • 1 large hothouse cucumber
  • 8 oz imitation crab, chopped
  • 1/2 cup (4 oz) fat free cream cheese
  • dash of salt

In a medium bowl, mix crab, cream cheese and salt together. Remove skin off of cucumber, and thinly slice lengthwise to make long strips of cucumber, then cut the strips in half. Place a little bit of your crab mixture on each piece of cucumber and roll up, securing with a toothpick. Serve with soy sauce, Bragg’s liquid aminos or Ponzu sauce. Enjoy!
