Makes 12 bites
- 1 cup pumpkin protein powder (we used Trutein Pumpkin Pie)*
- 1/4 cup oat flour
- 1/4 cup psyllium husk
- 2 tbs unsweetened almond milk
- 2 tbs baking stevia
*If you don’t have pumpkin protein powder, use vanilla and add 1/4 cup pureed pumpkin, 1/2 tbs pumpkin pie spice and remove the almond milk.
Mix all ingredients together until you have a very thick dough (you may need a little more or less milk – add a little bit at a time). Wet hands and roll into 12 bites. Refrigerate for at least 2 hours before eating, and store in refrigerator.
