Pumpkin Toffee Spice Granola

One of our favorite snacks is greek yogurt, but we’re always searching for a little crunch to put on top. This recipe is the perfect blend of sweet and spicy, and adds a little bit of crunch to any snack. We like to make a batch of this then store it in an airtight container to sprinkle on top of our greek yogurt, cottage cheese, or fresh berries with almond milk.

Pumpkin Toffee Spice Granola

Serves: 8

Prep Time: 5 min


  • 2 cups old fashioned oats
  • 1/2 cup pumpkin puree
  • 1 tbs raw honey
  • 1/2 tsp vanilla extract
  • 4-5 packets stevia
  • 2 tsp pumpkin spice
  • 1/4 cup chopped pecans
  • 1/4 cup toffee chips


  1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  2. In a medium bowl, combine all ingredients and mix well.
  3. Spread out on to your prepared pan and bake for 15-20 minutes, stirring occasionally.
