Skinny Guacamole

Holy guacamole! Cinco de Mayo is this Sunday and there’s no better way to celebrate than with our protein packed, reduced calorie guacamole. Rich in healthy fats and high in  protein, this will definitely be a crowd pleaser if you’re having a get together this weekend. If you don’t have time to make your own, we highly recommend Trader Joe’s Reduced Guilt Guacamole. Serve with veggies or toast a low carb wrap/pita and cut into pieces to make your own pita chips. This is also great on top of salads or your eggs for breakfast. Whatever you decide to pair this recipe with, we know you’re going to love it!

 

Skinny Guacamole

Yields about 2 cups

  • 2 Haas avocados, halved, seeded and peeled
  • 1 cup nonfat Greek yogurt
  • 1/2 cup onion, diced
  • 2 roma tomato, diced
  • 1/2 jalapeno pepper, seeded and minced
  • 1/4 tsp lime juice
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
In a bowl, mash the avocados well then add in all other ingredients and mix until thoroughly combined. Enjoy!
 

Servings: 8 (1/4 cup per serving)

Carbs: 4.5 g

Fiber: 2 g

Protein: 3.5 g

    Just made this for dinner to use as a topping for some healthy black bean & salsa wraps I made! It was so creamy and delicious! The whole family loved it and was so shocked when I told the greek yogurt was in it! Will be making this again!
