Pumpkin Spice Bread

This pumpkin bread is to die for! Growing up one of our favorite things about fall was the pumpkin bread our mom would make. Now that we’re older, nothing has really changed ~ we’re in love with anything pumpkin especially this bread. This makes a great grab and go breakfast or snack to munch on at work. You may even want to double the batch and make two loaves because this bread won’t be around long 😉

Pumpkin Bread

Makes 8 servings
  • 1 cup oat flour
  • 1/4 cup coconut flour
  • 1/2 cup protein powder (we used Trutein Cinnabun)
  • 1 egg
  • 1/2 cup pumpkin puree
  • 1/2 cup baking stevia or sweetener that measures like sugar
  • 1.25 cups unsweetened almond milk
  • 1 tbs pumpkin spice
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt
  • Optional: 1/4 cup semi-sweet chocolate chips
 
Preheat oven to 350 degrees and spray a loaf pan with nonstick spray. In a medium bowl, mix all dry ingredients then add in remaining ingredients, and stir until thoroughly combined. Pour batter into prepared pan and bake for 60-70 minutes or until a toothpick comes out clean. Enjoy!

    I recently found this recipe and was able to make it. It was so delicious. Not super sweet but I can always tweak that next time. Very moist, perfect in my opinion. Only thing I did different than the recipe was I didn’t add the Apple Cider Vinegar because I didn’t have any, oh and I didn’t add the choc chips to keep the fats/ carbs down. So good and awesome nutrition.
