Spice N’ Swirl Pumpkin Protein Cookies

With fall approaching fast, there’s no better  way to start the pumpkin season off right than by baking a big batch of pumpkin swirl cookies! These cookies are so moist you’ll feel like you’re biting into a piece of pumpkin pie, and they are so low in calories you won’t have to worry about the fact you just ate three! These are great for breakfast, snacks, and of course, dessert!

Spice N’ Swirl Pumpkin Protein Cookies

Makes 12 cookies

  • 3 egg whites
  • 1.5 scoops protein powder (we used Trutein Cinnabun)
  • 1 cup pumpkin
  • 2 tbs ground flax seed
  • 1 tbs coconut flour
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 tsp pumpkin pie spice
  • stevia to taste
  • 1/2 tsp baking soda
  • 1/2 tsp apple cider vinegar*

*do not leave out! This helps your cookies “fluff” up since you are cooking with protein powder

Preheat oven to 350 and spray a baking sheet with nonstick spray. In a medium sized bowl, beat egg whites with an electronic mixer for about 30 seconds or until egg whites are “foamy.” Then add all of your wet ingredients and mix well (by hand). In another bowl, combine all dry ingredients.  Slowly add your dry ingredients to your wet ingredients and stir until well combined. Place batter in a ziplock bag, cut the tip off one corner of the bag and “swirl” the batter around in a circle to make your cookies. Bake at 350 for 15-20 minutes. Top with powdered sweetener of choice! Best kept in the fridge if you have leftovers.
