Cran-Apple Fruit Salad

This is a great recipe to ease your way into fall. It’s loaded with apples, cranberries, almonds, protein and VEGGIES! Yes, you read that right. This recipe is a great way to sneak some vegetables in your kid’s diet or even that picky husband or boyfriend and they won’t even be able to tell! It’s sweet, crunchy, and refreshing, and since it’s loaded with veggies it will keep you full for longer. So go ahead and make this as an easy snack, a side dish to any meal, or even serve at a party!

Cran-Apple Fruit Salad

Makes 4 servings

  • 2.5 cups of broccoli slaw*
  •  1.5 cups non-fat greek yogurt
  • 1 apple, chopped
  • 1/3 cup of dried cranberries
  • 1/4 cup sliced almonds
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • stevia to taste
*This is just diced up broccoli stalks usually with a few carrots inside. We get ours at Trader Joe’s in the vegetable refrigerator section

In a large bowl combine greek yogurt, stevia, cinnamon, and vanilla, and mix well. Then add all other ingredients and combine until well coated with greek yogurt mixture. Serve immediately or keep in the refrigerator for up to 2 days.
