Skinny Brown Sugar Cinnamon Meringue Bites
What’s better than a dessert with brown sugar and cinnamon?! We’re pretty sure nothing, and these meringue bites prove it! They are light and airy, packed full of warm, satisfying flavor, and melt in your mouth. Plus they are only 5 calories each (so go ahead and have 10!) and they are SO easy to make. If you like brown sugar and cinnamon, you’ll love these mini bites!
Brown Sugar Cinnamon Meringue Bites
- 3 egg whites, room temperature
- 1/2 tsp cream of tartar
- 1 1/2 tbsp brown sugar
- 1/2 cup baking stevia (we used Truvia)
- 2 tsp cinnamon
- 2 tsp vanilla extract
Preheat oven to 225 degrees and line 2 baking sheets with parchment paper. In a large metal bowl using an electric mixer, beat the egg whites and cream of tartar together at high speed until soft peaks form. Gradually add the stevia, brown sugar and cinnamon a little at a time, then add the vanilla, beating well after each addition until you get stiff peaks, and the sugar is dissolved. Drop mixture by tablespoons on the baking sheets and bake for 60 – 70 minutes or until meringues have “hardened.”
