Pumpkin Pie Chia Pudding
We aren’t sure about you, but as soon as fall comes around we can’t get enough of everything pumpkin! This pudding is so creamy and filling – it’s perfect for a mid-afternoon snack to keep your energy high and your hunger at bay until dinner time! It’s rich with healthy omega-3’s, fiber, and antioxidants. If you haven’t tried chia seeds, this is a must try recipe! When soaked overnight, chia seeds expand in size and turn into a pudding similar to the consistency of tapioca. Serve this pudding for a healthy dessert or even for a quick breakfast!
Pumpkin Pie Chia Pudding
Makes 1 serving
- 1 cup unsweetened almond milk
- 2.5 tbs chia seeds
- 1/2 cup pure pumpkin (we used Libby’s)
- 1 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- stevia to taste
Mix all ingredients in a small bowl and refrigerate for 4 hours or overnight! Top with sliced almonds, maple syrup or whipped cream! Feel free to even mix in some greek yogurt or vanilla protein powder for an extra protein boost!
