If you’re looking for an easy, quick, no-bake breakfast option that you can grab & go out the door with, you’re in for quite a treat with this recipe.

I used almond butter as the base for this recipe, and it only takes about 5 minutes to whip up. It’s literally as easy as just mixing all the ingredients together and forming breakfast bites out of the mixture — I’m pretty sure just about anyone can pull this one off.

With a really decadently rich flavor (thank you cinnamon and almond butter!), you’ll find yourself craving these for days.

I used the Pure Protein blend of vanilla bean protein powder for this recipe.

It turned out really well! I plan to make these as quick snacks for friends, as a side treat to my morning coffee, and as a great “any time” option that’s good for you and uses minimal ingredients.

No-Bake Cinnamon Vanilla Protein Breakfast Bites

Makes approximately 12 bites | Prep Time: 5 mins

INGREDIENTS

  • 1 heaping Tablespoon cinnamon
  • 1/4 cup Pure Protein vanilla protein powder
  • 1/2 cup almond meal or oat flour
  • 3/4 cup oats
  • 1/3-1/2 cup almond butter (smooth)
  • 1 teaspoon vanilla
  • 1/3 cup honey or maple syrup

INSTRUCTIONS

Mix all your dry ingredients together in a medium mixing bowl (cinnamon, protein powder, oat flour/almond meal and oats) until evenly mixed. Then add the almond butter, vanilla and honey or maple syrup and stir together until all ingredients are well combined. You may need to add a bit more almond butter or syrup to get the right consistency – add them slowly! You want a thick, “almost mixed” consistency.

Once combined, scoop out 1 heaping tablespoon of the mixture at a time to form 1″ balls, placing them on a sheet of parchment paper as you go. Set in the freezer to cool and help firm the “dough,” probably around 10-20 minutes. Once firmed, enjoy!

Store the bites in the freezer for up to 4 weeks.
