2 Ingredient Truffles ~ Chocolate Valentine Recipe

Wowzers this recipe couldn’t get any easier.

I’m not even kidding – it’s only 2 ingredients!

Okay, maybe 3 if you decide to roll the truffles in coconut (which I highly recommend!)

Your valentine will have no idea you only spent 5 minutes making these delicious bites of heaven.

Not to mention, you can just put them in a pretty box and viola! an easy, cheap valentine gift idea 🙂

Now, enter Rise Bars… the star of this recipe.

If you’ve never heard of Rise Bars, let me fill you in…

They are the most delicious bars we’ve ever tried.

My favorite is the Pineapple Macadamia, which can be misleading because it honestly doesn’t taste like pineapple, but it’s SO good!!!

Liz’s favorite is the Almond Honey, which is totally to die for and definitely my runner-up favorite.

It has only 3 ingredients: almonds, whey protein, and honey. (insider tip: protein bars are 20% off February only at Risebar.com!)

Which brings me to my next point…

We LOVE Rise Bars because they contain minimal, all natural ingredients free of preservatives, gluten, soy, dairy and peanuts. 

Honestly, we get the question all the time what protein bars or powders to buy…

and 9 times out of 10 we will say none!

That’s because they are full of artificial sweeteners, preservatives and chemicals galore. 

I’m not sure about you but, thanks, but no thanks, I’ll pass on the fake ingredients and chemicals.

Anyway, total side-track rant about Rise Bars (not paid, totally honest opinion over here)…

Back to this recipe – we used the Carob Chip bars (which taste like a chocolate fudge brownie) to make this recipe.

If you don’t have Rise Bars on hand, feel free to swap with another bar of your choice.


Healthy Chocolate Truffles

Yields: 9

Ingredients

  • 3 Carob Chip Rise Bars
  • 1/2 cup semi-sweet or dark chocolate chips
  • optional: coconut

Instructions

  1. Remove the bars from packaging and cut into thirds.
  2. Using a toaster oven, heat the bars at 350 degrees for 2-3 minutes or until warm and soft.
  3. Remove from oven, let sit for 30 seconds, roll into balls and set aside.
  4. In a small saucepan, heat chocolate over medium-low heat stirring frequently until chocolate is smooth and melted.
  5. Quickly roll balls into the melted chocolate until covered, then roll in coconut if desired.
  6. Enjoy!
