Dark Chocolate Peanut Butter Protein Cupcakes!

Have you ever eaten a cupcake and wished it was actually good for you?! Well, it’s finally here! Not only that but it’s a rich chocolate cupcake with peanut butter frosting, and it’s so easy it only takes 10 minutes to make. So go ahead and make this recipe and you’ll get two cupcakes for about 200 calories, or if your family and friends get lucky maybe you’ll share.

Dark Chocolate Peanut Butter Protein Cupcakes

Makes 1 serving (2 cupcakes)

  • 1 scoop protein powder (we used Trutein Chocolate Peanut Butter Cup)
  • 1 egg white
  • 1 tsp unsweetened dark chocolate cocoa powder (we used Hershey’s)
  • 1/2 tsp baking powder
  • 1/2 cup water or milk
  • 1/4  tsp apple cider vinegar*
  • stevia to taste
  • Optional: semi-sweet chocolate chips
 
Peanut Butter Frosting
  • 2 tbs powdered peanut butter, like PB2
  • 2 tbs nonfat greek yogurt
  • stevia to taste
do not leave the vinegar out! This reacts with the baking soda and helps “fluff” your cupcakes up. 
 
Preheat oven to 350, and spray a cupcake pan with nonstick cooking spray. In a small bowl combine all dry ingredients. Add the water, egg white, and vinegar, and stir well. The batter should not be very thick, so you may need to add more water (or less if it’s too runny). Spoon batter into prepared cupcake pan, and bake for 10-12 minutes or until cupcakes have risen. In another small bowl, mix powdered peanut butter, greek yogurt, and stevia, and stir well. Frost cupcakes with peanut butter mixture and enjoy!

    Hi Mona,

    That’s very strange. We aren’t sure why that happened – it may be the protein powder reacting to the vinegar? Or possibly your vinegar is expired? We’ve never tried using that protein so we really can’t say.

    Made this and stuck my spoon in to take a bite and it smelled like ammonia…tried making it again with all of the same ingredients AND double checked expiration dates and ammonia smell once again, I have NOO idea what it could have been. Maybe my protein?? I don’t know, the protein I used is Met-Rx protein and oats (vanilla flavor).
