Healthy Halloween Series ~ Pumpkin Spice Energy Bites
Mmm.. mmm… mmm… Not sure about you, but as soon as October hits it’s like all I want to eat is pumpkin…. Pumpkin lattes. Pumpkin pie. Pumpkin donuts. Pumpkin bread. Pumpkin Muffins… I think you get the point 😉 Of course I don’t actually eat all of those things, but the cravings are totally there and that’s when I make this recipe (or our Skinny Pumpkin Pie). These pumpkin spice bites are the perfect fall treat – you can make a big batch and store it in your refrigerator for when the pumpkin cravings hit.
Pumpkin Spice Energy Bites
Yields: 20
Ingredients
- 1 ½ cups old fashioned rolled oats
- ¼ cup peanut or almond butter
- ½ cup pumpkin puree
- ¼ cup ground flaxseed
- ¼ cup raisins
- 1-2 tbs honey
- 1 tsp pumpkin spice
Instructions
- In a large bowl mix all ingredients together until thick.
- Roll into tablespoon sized balls and refrigerate for 1-2 hours before serving.
