Fudgy Almond Butter Brownies
Warning: these are dangerously good. So good that you may be tempted to eat the entire pan. Portion control needed. 😉
These are quite possibly the best brownies we’ve ever made. In fact, we served them to our family and friends over the weekend and they had no idea they were only 80 calories, flourless, and completely sugar free! Our friend Clay inspired us to use almond butter in our brownies a couple weeks ago and they came out better than we thought! The almond butter makes them so fudgy and rich – you’ll be able to fool all those picky eaters who won’t touch the “healthy” stuff. We hope these are as big of a hit in your family as they are in ours. This has become a new favorite for us! 🙂
Fudgy Brownies
Makes 9 servings
- 3 tbs almond butter
- 1 egg
- 1/2 cup unsweetened cocoa powder*
- 3/4 cup baking stevia (we use Truvia)
- 1 cup unsweetened almond milk
- 1/4 cup semi-sweet chocolate chips
- 1/4 tsp salt
- 3/4 tsp baking powder
Preheat oven to 350 degrees and spray a 9 x 9 baking dish with nonstick spray. In a small bowl, mix almond butter, egg, milk, and stevia until throghoughly combined. Add in your cocoa powder, salt and baking powder, and mix well. Fold in the chocolate chips and bake for 25-30 minutes or until a toothpick comes out clean. Cut into 9 pieces and enjoy!
to me they seem chocolatey enough with the cocoa powder, is there a good nut or dried fruit etc we could add instead of choc chips? something to pack a bit more protein etc..

Yes, again you’d have to just add a little at a time and taste test until you get the desired sweetness 🙂
I only have powdered stevia, could it work too?

Can I use sweet leaf sweet drops instead of truvia? These look fantastic!
