Chipotle BBQ Chicken Skewers
Memorial day weekend has always been a favorite of ours – the weather is getting warmer, summer is right around the corner, and it’s the start of birthday celebrations for all 3 girls in our family (yes, we have another sister! Love ya, Lindsay!). Every year we spend the long weekend with family, friends and great food. If you’re gearing up to do the same, here’s an easy, healthy and delicious meal you can try this weekend!
Chipotle BBQ Chicken Skewers
Makes 4 servings
- 4 boneless, skinless chicken breasts (about 16 oz)
- 1 red pepper
- 1 green pepper
- 1/2 large onion
- salt and pepper, to taste
- Mrs. Dash Southwest Chipotle seasoning, to taste
Preheat your grill on medium heat. Cut chicken into 1″ pieces and set aside. Slice peppers and onion into large chunks. Place chicken and veggies onto a skewer, season with salt, pepper, and Mrs. Dash and place on your grill. Cook for approximately 8 minutes, then flip over and cook for an additional 8-10 minutes or until chicken is cooked. Enjoy!
