Roasted Garlic Green Beans
Nothing’s better than a simple dish that tastes great, is good for you, and only takes a few minutes to throw together. As often as we can, we head to the local Farmer’s Market to pick up fresh fruits and vegetables, and green beans are always one of our favorites! We love making this recipe at the beginning of the week to have veggies on hand that we can pair with chicken or fish for an easy meal.
Roasted Garlic Green Beans
Makes 4 servings
- 1 lb fresh green beans
- 5 cloves garlic, diced
- salt and pepper, to taste
Preheat oven to 400 degrees and spray a 9 x 9 baking dish with non-stick spray. Place green beans in your pan and lightly spray with cooking spray (we used Trader Joe’s Coconut Oil Spray). Sprinkle garlic, salt and pepper on top and bake for 20-25 minutes turning after 15 minutes. Top with light feta cheese, if desired, and enjoy!
