Fudge Brownies
We’ve tried many times to make a healthy brownie with black beans, but they never seemed to turn out and we could always taste the beans. This time was completely different – one bite of these brownies had us completely fooled! They are some of the richest, most fudge-y brownies we’ve ever had and they are completely healthy. If you love fitness, but you also love chocolate, now here’s a way to enjoy them both. It’s our gift to you this holiday season!
Fitness Lover’s Fudge Brownies
- 1 can (15 oz) black beans
- 1 egg Egg
- 1 egg white
- 3/4 cup baking stevia
- 1 tbsp strong brewed coffee
- 1/4 cup mini semi-sweet chocolate chips
- 2 tsp vanilla
- 1 tsp baking powder
Preheat oven to 350 degrees and spray a 9 x 9 baking pan OR a cupcake pan with non-stick spray. In a food processor, process all ingredients except the chocolate chips until batter is smooth. Stir in the chocolate chips and pour batter in your prepared pan. Bake for 30-35 minutes or until toothpick comes out clean. Enjoy!
