Easy Protein French Toast
Nothing reminds us more of growing up than waking up on the weekend to a good batch of French Toast. Who knows what even went into our French Toast when we were little though (probably a ton of sugar and butter!), not to mention the fact that we doused our French Toast in syrup that was loaded with sugar.
Since we are visiting our parents in San Diego this weekend, we decided to crate our own healthier version to celebrate one our of childhood favorites. This one is sure to be a hit among the whole family – our parents loved it! We made a large batch since we were cooking for others, so feel free to half the recipe or even make the whole thing to have an easy breakfast for the next day!
Protein French Toast
Makes 5 servings
- 10 slices low calorie whole wheat bread (we used Nature’s Own 100% Whole Wheat which has 50 calories per slice)
- 1 egg
- 5 egg whites
- 1/2 cup unsweetened almond milk
- 1/4 cup protein powder (we used Trutein Cinnabun – AMAZING!)
- 3 packets of stevia
- 3/4 tsp vanilla extract
- 1/2 tsp cinnamon
Preheat a large skillet on medium-low heat and spray with non-stick cooking spray. In a large bowl, whisk egg and egg whites together. Add all other ingredients and whisk until thoroughly combined. Dip slices of bread into your egg mixture and cook on until golden brown on both sides, flipping halfway through. Top with fruit, peanut butter, sugar-free syrup, homemade jelly or whatever your heart desires. Enjoy!
