Mayo-less Egg Salad

Ditch the mayo and try this recipe that uses hummus instead to save hundreds of extra calories. So simple, yet so delicious! This makes a great breakfast or lunch you can pack & take on the go. LIz and I have to hand to Trader Joe’s for the inspiration behind this recipe – we both love their egg white salad! I don’t think they use hummus for theirs, but it makes a great substitution for mayonnaise

Just chop 5-6 hardboiled egg whites, place in a bowl with veggies of choice (we like bell pepper and cucumber), then add in 2 tablespoons of hummus and seasonings of choice.

Voila! You’re done!

Simple. Delicious. Protein Packed. Only 150 calories with 24 grams of protein! 


Mayo-less Egg Salad

Serves: 1

Ingredients

  • 5-6 egg whites, chopped
  • 1/4 cup bell pepper, chopped
  • 1/4 cup cucumber, chopped
  • 2 tbs hummus of choice
  • dash of sea salt
  • any seasonings you like!

Instructions

  1. Place chopped egg whites in a bowl and add in cucumber and bell pepper.
  2. Stir in your hummus and seasonings.
  3. Enjoy!
