12 Days of Christmas ~ Day 8 ~Sweet and Sour Meatballs
Today’s recipe is Sweet and Sour Meatballs! These baked meatballs are full of flavor and make a great dish to bring to any holiday party. We love to pair them with a salad, spaghetti squash or steamed vegetables for an easy, healthy dinner.
Sweet and Sour Meatballs
Serves: 6
Ingredients
- 1.5 lb lean ground turkey or chicken
- 1 egg white
- 1/4 cup chopped pineapple
- 1/4 cup oat flour
- 1 clove garlic, chopped
- 1 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp pepper
For the sauce:
- 1/4 cup tomato paste
- 1/4 cup rice vinegar
- 1/3 cup soy sauce
- 1/2 cup baking stevia or sweetener that measures like sugar
- 1 tbs cornstarch
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
Instructions
- Preheat oven to 350 degrees and spray a baking dish with nonstick spray.
- In a large mixing bowl, mix all ingredients for the meatballs together and form into 20 meatballs.
- Place in your prepared pan and set aside.
- In a small saucepan, combine all ingredients for the sauce and cook over medium heat until sauce begins to thicken.
- Remove sauce from heat and pour over meatballs.
- Cook for 40-45 minutes or until meatballs are cooked through. Enjoy!
