Skinny Lemon Bars
*To the tune of the Batman theme song* Lemon lemon lemon lemon LEMON BARS! Liz’s favorite. Do you like them too? Do you randomly get cravings for them but know they aren’t really that great for your fitness goals? Join the club!
So here’s the solution. Try out these bad boys instead. They’ll help satiate your lemon bar craving but keep you slim and trim at the same time. To be eaten in moderation, as always; just because it’s a healthier “clean” version of the treat, doesn’t mean it’s not still a little treat. 😉
But thank goodness this little clean lemon bar has come to save the day for us fitness folks. Now when life gives you lemons, just make these bars!!
Skinny Lemon Bars
Serves: 12
Ingredients
For the crust:
- 1 cup graham cracker crumbs
- 2 tbs melted unsalted butter or coconut oil
- 1-2 tbs unsweetened almond milk
- 2 tbs baking stevia or sweetener that measures like sugar
For the lemon filling:
- 2 eggs
- 1 (14 oz) can sweetened condensed milk
- juice and rind from 2 lemons
- 1/4 cup baking stevia or sweetener that measures like sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350 degrees and line a 9 x 9 pan with parchment paper (or spray well with nonstick spray)
- In a medium bowl, mix ingredients for crust then press into the bottom of your prepared pan
- In another bowl, beat eggs well then add all other ingredients and mix until smooth.
- Pour batter into prepared pan and bake for 45-50 minutes or until center is firm
- Let cool and refrigerate for 3-4 hours before serving
