Mini Protein Trifles
How cute are these?! There’s no better way to celebrate the 4th of July than with these adorable patriotic trifles!
Growing up our mom’s speciality dessert during the summer was her berry trifle – any party or big event she would whip together one of these to bring along. She would layer angel food cake, pudding, and cool whip with strawberries and blueberries. Everyone loved it, and was always such a hit it was gone within minutes. We decided to revamp our mom’s specialty to make own our healthy alternative that has no added sugar and has 20 grams of protein per serving. Talk about a dessert that will leave you feeling satisfied!
Mini Trifles
Makes 4 mini trifles
For the Angel Food Cake:
- 10 egg whites, room temperature
- 1/2 tsp cream of tartar
- 1/2 tsp vanilla extract
- 1/4 cup protein powder (we used Trutein Cinnabun)
- 1/3 cup Truvia
- 1 cup plain Greek yogurt
- 1 packet stevia
- 1/2 tsp vanilla extract
- 1 cup sliced strawberries
- 1 cup blueberries
- 4 tbs Truwhip or Cool Whip
Preheat oven to 325 degrees and spray an angel food cake pan well with nonstick spray. In a large mixing bowl combine egg whites, vanilla extract, and cream of tartar. Beat with electronic or stand mixer until stiff peaks are formed. Do not over mix as your egg whites will deflate! As soon as your egg whites have formed stiff peaks, stop mixing, and SLOWLY FOLD in the protein powder and Truvia. Make sure you take your time and slowly add these items or else your egg whites will deflate . Once all ingredients are well combined, pour batter into prepared pan. Bake for 40-45 minutes. Remove from oven and let cool.
Meanwhile, in a small bowl, mix greek yogurt, stevia and vanilla extract together until well combined. Once cake is cool, break or cut into small pieces. Starting at the bottom of your mini trifle dishes or parfait glasses, layer half of your angel food cake with half of the strawberries and blueberries on top in each dish. Then add 1/4 cup greek yogurt to each dish, and top with remaining cake and berries. Finish it off with a dollop of Truwhip on each trifle and enjoy!
