Easy Veggie Frittata Recipe

Veggie Frittata

Nothing reminds us of our dad more than a good veggie omelette or frittata. It was always his specialty when we were growing up, and we loved waking up on weekend mornings to this delicious treat. The best part about this recipe is that you can really add whatever you want! Also, this makes only 1 serving so be sure to double (or triple) the recipe if you’re making it for others!

Veggie Frittata

Makes 1 serving

  • 1 egg
  • 3 egg whites
  • 1/2 cup chopped yellow pepper
  • 1/2 cup kale or spinach
  • 2 tbs diced onion
  • 1/2 tbs Mrs Dash garlic & herb
  • salt and pepper, to taste
  • 4-5 cherry tomatoes
  • 1 tbs feta cheese

 

Preheat a small non-stick omelette pan (or spray with non-stick spray) on medium-low heat. Place all the veggies in your pan and let cook for 3-5 minutes. In a medium bowl, beat the egg, egg whites, and seasonings well. Once veggies are soft, pour eggs over them. Cover with a lid and cook until eggs are firm. Remove from pan and top with tomato and feta cheese.
