Skinny Sun-Dried Tomato Pizza

The number one recipe request we are always getting from our mother is a “healthy” pizza. Time and time again we told her about our Cauliflower Pizza, but she doesn’t have a food processor or the time to spend cooking after a long day at work.

Lots of people can probably relate, so we created this delicious pizza that requires no food processor at all. It’s super easy to make! If you’ve never heard of garbanzo bean flour, you can find it at Whole Foods or any specialty health food store in the baking aisle.

 

Sun-Dried Tomato Pizza

Makes 1 serving

  • 1/4 cup garbanzo bean flour
  • 2 tbs coconut flour
  • 1 egg white
  • 2-3 tbs milk of choice
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 tsp oregano
  • 2 tbs tomato sauce
  • 2 tbs mozzarella cheese
  • 1 tbs light feta cheese
  • 1 tbs chopped sun dried tomato
Preheat oven to 375 degrees and line a baking sheet with parchment paper.  Mix all the first 7 ingredients in a mixing bowl until thoroughly combined and a thick dough forms (you may need a little more or less milk). Place mixture on your prepared baking sheet, top with a piece of parchment paper, and roll out into a pizza shape using a rolling pin. Bake for 5-8 minutes, then remove from oven and carefully flip over. Return to oven for another for 5-8 minutes, then remove and top with remaining ingredients and place in oven for an additional 3-5 minutes. Enjoy!
