Protein Brownie Cookies

Well, we thought we already made the best brownie recipe out there, but these are to DIE FOR! There must be something about adding almond butter into brownie recipes because these cookies taste absolutely sinful – no one will even know they are healthy! The reality is, they are packed full of superfood nutrition thanks to the addition of cacao powder, have no added sugar and have almost 5 grams of protein per cookie. These are sure to disappear quickly, so you might want to consider doubling the batch 😉

Protein Brownie Cookies

Makes 1 dozen cookies

  • 2/3 cup cacao powder
  • 1/4 cup almond butter (we used Justin’s Chocolate Almond Butter)
  • 1/2 cup Truvia or erythritol (like this one)
  • 1/2 cup vanilla protein powder (we used IsaPro)
  • 1 egg
  • 2 tbs unsweetened almond milk
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
Preheat oven to 350 degrees and line a baking sheet with parchment paper. In a medium bowl, mix all dry ingredients together until well combined. Slowly add the almond butter, egg and milk, and mix until well combined and a thick dough forms. Using your hands (you can wet them if the dough is sticking to your hands), form dough into small balls, flatten between your hands and place on your prepared baking sheet. Bake for 10-12 minutes. Enjoy!
