Chocolate Protein Pancake Roll-up

Who doesn’t love strawberries and chocolate?! This recipe is so delicious and satisfying, and it will cure any sweet tooth craving. Plus, it’s high protein and high fiber which will help keep you full until your next meal! This makes a great mid-afternoon snack or is even great for a pre-bedtime snack.

 

Chocolate Protein Pancake Roll Up

  • 1/4 cup chocolate protein powder (we used Trutein)
  • 2 egg whites
  • 1/4 cup unsweetened almond milk*
  • 1 tbs psyllium husk
  • 1/2 tbs unsweetened cocoa powder
  • 1 packet stevia
  • 1/4 tsp baking powder

For the filling:

  • 1/2 cup nonfat Greek yogurt
  • 2 strawberries
  • 1/2 packet stevia

Preheat a nonstick pan or skillet over medium-low heat. In a small bowl, beat egg whites well. Add all other ingredients and whisk until well combined (*all protein powders are different so you may need a little less or more milk – you want a pancake batter consistency!). Pour batter into pan and cook until golden brown, flipping halfway through. In another small bowl, mix greek yogurt with your stevia. Spoon this onto you protein pancake, top with sliced strawberries, and cinnamon or crushed nuts, roll up and secure with a toothpick. Enjoy!
