Chocolate Chip Protein Angel Food Cake

Now, this recipe really gets us excited… so excited in fact that it almost brought Sara to tears! With this recipe, you can now have your cake and eat it too! In fact, you could eat this ENTIRE cake for less than 400 calories, and you would be completely guilt-free. You now have our permission to stuff your face indulge!

Just look at that chocolately goodness! We added chocolate chips, ’cause who doesn’t like to have a little chocolate with their cake?

 

Chocolate Chip Protein Angel Food Cake

Adapted from the Dashing Dish

  • 7 egg whites at room temperature
  • 1/2 scoop of protein powder (we used Trutein Cinnabun)
  • 1 tsp cream of tartar (do not leave out, this will help your egg whites form stiff peaks!)
  • 1 tsp vanilla extract
  • 1/4 cup mini semi-sweet chocolate chips
  • Stevia to taste

 

Preheat oven to 350, and spray an 8 inch round cake pan with non-stick spray. In a large mixing bowl combine egg whites, stevia, vanilla extract, and cream of tartar. Beat with electronic mixer until stiff peaks are formed. Do not over mix as your egg whites will deflate! As soon as your egg whites have formed stiff peaks, stop mixing, and SLOWLY FOLD in the protein powder and chocolate chips. Make sure you take your time and slowly add these items or else your egg whites will deflate and they will not rise again. Once all ingredients are mixed together, spoon batter into pan and bake for 20 minutes or until top is golden brown. Serve with whipped cream, more chocolate chips, chocolate sauce or just eat plain!

    Every Stevia is different (that’s why we don’t really put amounts) but probably about 2/3 cup of baking stevia (a blend that measures like sugar such as Truvia) or 1/8 tsp of stevia extract (very strong so you don’t need much!)
