Hearty Chicken Sausage Roast

Winter season is in full force, and there’s nothing better than a hot meal on a cold day. Soothe your winter woes with our healthy & easy-to-make Chicken Sausage Roast – a rainbow of colorful bell peppers, savory onions and hearty protein.

Perfect for family gatherings, this satisfying roast has 16g of protein per serving to fill you up and keep you full. Vary the flavors by choosing different flavored sausages and you’ve got yourself an easy meal staple that you can make throughout the season!

  • 8 chicken sausages (we used Trader Joe’s Sweet Italian Chicken Sausage)
  • 3 bell peppers, chopped (we used 2 red and 1 yellow)
  • 1 medium onion, chopped
  • 2-3 rosemary sprigs
  • 1 cup baby potatoes, chopped
  • 2 cups chicken broth
  • salt and pepper to taste
Preheat oven to 350 degrees and spray a 9 x 13 baking pan with non-stick spray. Chop chicken sausages in half both vertically and horizontally so you have four pieces. Place the first 5 ingredients into your pan, pour the chicken broth over the top, and season with salt and pepper. Cover pan with foil and bake for 40-45 minutes. Then remove foil and broil for 5 minutes or until sausages are golden brown. Enjoy!
