Baked Cinnamon Raisin French Toast

Our Baked Cinnamon Raisin French Toast is the perfect breakfast to whip up for the family this winter. Straight from scratch, this easy-to-make dish will tickle your tastebuds with cinnamon and raisins in every bite. It has the perfect ratio of protein to whole-grain carbs and will leave the whole house smelling absolutely amazing! Feel free to use gluten-free bread instead for the gluten-sensitive crowd.

Baked Cinnamon Raisin French Toast

  • 6 slices of low calorie whole wheat bread (approximately 50 calories per slice)
  • 1 1/2 cups of liquid egg whites
  • 1 1/4 cup unsweetened almond milk
  • 1/4 cup baking stevia
  • 2 tsp cinnamon
  • 1 tbsp greek yogurt
  • 2 mini boxes (0.5 oz) raisins

Preheat oven to 350 and spray a 9 x 9 baking pan with nonstick spray. Cut bread into small square cube pieces, and place in pan. In a small bowl, combine the rest of the ingredients except the raisins and mix well. Pour mixture over the bread and sprinkle the raisins on top. Bake at 350 for 40-45 minutes or until golden brown. Top with maple syrup or honey and enjoy!
