12 Days of Christmas ~ Day 8 ~Sweet and Sour Meatballs

Today’s recipe is Sweet and Sour Meatballs! These baked meatballs are full of flavor and make a great dish to bring to any holiday party. We love to pair them with a salad, spaghetti squash or steamed vegetables for an easy, healthy dinner. 

 


Sweet and Sour Meatballs

Serves: 6

Prep Time: 10 min

Ingredients

  • 1.5 lb lean ground turkey or chicken
  • 1 egg white
  • 1/4 cup chopped pineapple
  • 1/4 cup oat flour
  • 1 clove garlic, chopped
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp pepper

For the sauce:

  • 1/4 cup tomato paste
  • 1/4 cup rice vinegar
  • 1/3 cup soy sauce
  • 1/2 cup baking stevia or sweetener that measures like sugar
  • 1 tbs cornstarch
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

Instructions

  1. Preheat oven to 350 degrees and spray a baking dish with nonstick spray.
  2. In a large mixing bowl, mix all ingredients for the meatballs together and form into 20 meatballs.
  3. Place in your prepared pan and set aside.
  4. In a small saucepan, combine all ingredients for the sauce and cook over medium heat until sauce begins to thicken.
  5. Remove sauce from heat and pour over meatballs.
  6. Cook for 40-45 minutes or until meatballs are cooked through. Enjoy!
